Salad Burnet

Poterium sanguisorba

This hardy, semi-evergreen perennial is predominantly found on chalk grasslands and soils. Its small, toothed leaves form a basal rosette from which dainty, globe-like flowerheads eventually protrude. It has no petals but instead, crimson styles give the flowerhead its colour. It is known for its scented leaves, which smell like cucumber and are often used in salads.
